Eat your vegetables

As a child, my mother always stressed the importance of eating vegetables. She made comments such as "carrots are good for the eyes" and "spinach makes you stronger". I was extremely greedy as a child so it didn't take much for me to eat anything. As an adult, I became more interested in what I consumed. I read an article on www.sheknows.com titled Top 10 Healthiest Vegetables. Below is a list of some of the vegetables and their benefits.

  • Tomatoes- Renowned for their cancer-fighting capabilities
  • Carrots- These orange-wonders are loaded with eye, skin and hair-enriching nutrients. Rich in vitamin C, carrots protect your cardiovascular system from damage.
  • Squash- Can help treat dozens of conditions including asthma, osteoarthritis and rheumatoid arthritis
  • Bell Peppers- Recent research suggests digging into a pepper every day may lower your risk of developing lung, colon, bladder and pancreatic cancers.
  • Spinach- Scientists believe a diet heavy in spinach may be able to prevent everything from heart disease to colon cancer, and arthritis to osteoporosis.

My Die-Lent

Today is Ash Wednesday, the start of Lent. According to www.thefreedictionary.com, Lent is defined as the 40 weekdays from Ash Wednesday until Easter observed by Christians as a season of fasting and penitence in preparation for Easter.

I have participated in Lent for the past 4 years. It started as a challenge to motivate me to lose weight (diet) by giving up the foods and beverages that I was sure was packing the pounds on me. This intial challenge turned into a yearly opportunity to see how far I can push myself with the limits of my love...FOOD! Here is my 4 year breakdown:

2010- I gave up my favorite food..RICE, my favorite drink..Coke
2011- I became a pescutarian (no meat but seafood is fine) and no sugar (including juice, sodas)
2012- I became a vegetarian (no meat...AT ALL) and no sugar (including juice, sodas)

That brings us to 2013..my biggest challenge thus far. This year, I will become vegan. The short, short definition is I will not be able to eat anything that had a mother. I am saying goodbye to all meat, seafood and diary. *sigh*

Wish me luck guys because Im sure my inner fat girl is going to be angry!

So, do you Lent? If so, what are you giving up?
